Arrowhead Cabbage Vermicelli Stir-Fry

This quick stir-fry is a great, easy healthy dinner that celebrates the Arrowhead Cabbage. We love the cabbage’s fun shape and thin leaves that perfectly slice into ribbons, but you can substitute with the cabbage in season at the time. It's full of organic veggies and the perfect addition to your healthy meal plan!


ingredients: 

  • 1 Local Roots Arrowhead Cabbage
  • 1” fresh ginger
  • 3 cloves Local Roots garlic
  • 2 green onions
  • 2 tbsp sesame oil
  • 1/2 tsp salt
  • 4 bundles vermicelli
  • 5 tbsp soy sauce
  • 1 tsp Chinkiang vinegar
  • ½ tsp white pepper
  • 1 ½ tsp sugar
  • 2 tbsp water
  • dried Chinese chilies (optional)
  • toasted sesame seeds

Steps: 

  1. Soak bundles of vermicelli in cold water. 
  2. Wash and thinly slice arrowhead cabbage into ribbons. Peel and julienne ginger, finely dice garlic, and cut green onions on a bias (removing the roots).
  3. Stir together the sauce. In a small bowl, mix soy sauce, vinegar, white pepper, sugar, 2 tbsp of water, and dried chilies (if using) until the sugar has dissolved.
  4. Add 2 tbsp of sesame oil to a large pan on medium heat. Saute the ginger, garlic, and green onion whites until fragrant. 
  5. Turn the heat to high, then add the cabbage. Sprinkle over ½ tsp salt. Stir fry for 3-4 minutes.
  6. If you’d like, you can cut each bundle of soaked vermicelli in half so the noodles are easier to stir fry. When the cabbage begins to soften and brown a little on the edges, add the vermicelli to the pan. Pour the sauce as evenly as possible over everything and toss until well coated. 
  7. Add the sliced green onion tops and a sprinkling of sesame seeds. Serve.
