Plums

Plum Flan
-From NYU Langone Medical Center – A Local Roots CSA Site-

3/4 cup white sugar
1/4 cup soft butter
2 eggs
1 cup all-purpose flour
1 tsp baking powder
1 tsp orange zest
1/4 cup low-fat milk
2 cups halved, pitted fresh plums

1. Puree plums and strain through colander to remove any clumps and combine with milk.
2. Cream together sugar and butter.
3. Beat in eggs, beat well.
4. Combine flour, baking powder and zest.
5. Beat into egg mixture alternating with milk mixture.
6. Split batter into 10 small ramekins.
7. Bake in 350 degree oven 45-55 minutes or until set.

Parsley Plum Vinaigrette

2 ripe plums
1/2 bunch parsley
1/4 cup white balsamic vinegar
1/2 cup olive oil
1 clove garlic
salt, to taste
pepper, to taste

1. Peel and slice plum in half to remove pit.
2. Roughly chop.
3. Place all ingredients into blender and combine until smooth.
4. Season to taste.
