How to Freeze Leafy Greens

1. Fill a large bowl with equal parts water and ice
2. Wash the greens, drying is not necessary
3. Boil a large pot of water
4. Using tongs, dunk the greens in the boiling water for about one minute; pull out and immediately transfer to ice water.  The ice water stops the cooking process and helps keep your greens at optimal consistency for freezing.  Keep submerged in ice water for 10 seconds.
5. Once your greens have chilled, squeeze excess water out and place greens into a airtight zip lock bag and then into your freezer

note: frozen greens aren’t good for salads, but are wonderful in dips or soup!
